Gingerbread
The gingerbread spice used in the recipe can be used for several runs of gingerbread; keep it in a little box. The baking time in this recipe is a bit on the high side, so to avoid getting a gingerbrick, keep a close eye on the dough as it is baking.
Ingredients
- Spice
- 35g cinnamon
- 8g cloves
- 1 tsp piment
- 2 tsb muscat
- 2 tsp cardamom
- ½ tsp ginger
- 1 tsp aniseed
- Dough
- 1 cup milk
- 1 ¼ cup sugar
- 2 cups whole grain flour or spelt flour
- 1 ½ tbsp gingerbread spice mix
- 1 ½ tbsp cocoa powder
- ½ tbsp baking powder
- 2 tbsp canola oil
Instructions
- Mix all the ingredients.
- Pour onto tray (about 5cm high).
- Bake at 200°C / 390°F for 35 minutes.
